Ingredients

1 cup

diced red onion

1 tablespoon

olive oil

1 15.5 oz jar

TOSTITOS® Chunky Salsa (Medium)

1 cup

water

4 oz

canned green chiles

1 cup

black beans, drained & rinsed

½ cup

canned yellow corn, drained

4 oz

TOSTITOS® Original Restaurant Style

Avocados From Mexico, diced

½ cup

queso fresco or shredded Monterrey Jack cheese

salt and pepper, to taste

How to Make

Preheat oven to 350ºF

Heat olive oil in a large deep, oven safe skillet over medium/high heat.

Place onion in the skillet and sauté for about 3 minutes. Add TOSTITOS® Chunky Medium Salsa, water, and canned green chiles. Bring to a boil and then turn down to medium heat and let simmer for about 5 minutes. Stir occasionally.

Add black beans and corn to the skillet and let cook for 2-3 minutes.

Gently fold half of the TOSTITOS® Restaurant Style Tortilla Chips into the salsa mixture until well incorporated then repeat process with the rest of the chips.

Next, make 4-6 indentations throughout the mixture and crack an egg into each indent.

Place in oven and bake for 25-30 minutes, depending on how you like your eggs.

Season with salt and pepper and top with diced Avocados From Mexico. Serve and enjoy!
